Chef Jimmy Maddin's jazz-filled steakhouse—Caesars Palace pedigree, generous portions, live music nightly. JM Steakhouse is a love letter to both food and jazz, built by Chef Jimmy Maddin—former Executive Chef at Caesars Palace—who retired to Cabo in 2019 and couldn't find a great steak at a reasonable price. He opened JM to fix that. The walls are covered in music memorabilia including his father's saxophone; live jazz, blues, and pop play Monday through Saturday from 6:30–9:30pm. The menu balances Italian classics (lasagna, chicken parm, veal marsala) with prime steaks, fresh seafood flown in from the US, and generous surf-and-turf combinations. Closed Sundays.
